Here in Canada, many are pining for the day they can put a California Cab in their glass. The good news, there are wines like this Chateau St Jean 2021 Cabernet Sauvignon Knight's Valley that could use the extra time in bottle to get to where it will be at its best
As a Canadian, it is unfashionable these days to promote a wine from the US; especially because the majority of our country can't buy them. But I've had this one locked and loaded for a long time, and I am sure there are a few others on my list to come. They cannot remain there indefinitely, so I'm just going to have to break some norms ... Today, it's the Austin Hope 2021 Cabernet
Sure you've had Cabernet Sauvignon before, but this is a different kind of Cab. This is not just a single vineyard, it's a designer, and designed, single vineyard; but at a price that's affordable for all.

This comes from the aforementioned Sicilian project ... A wonderful Cab from Sicily that's silky on the palate with notes of chocolate, red cherry and black cherry plus subtle tannins... Hidden behind that fruit our notes of vanilla and molasses. Only 10% new oak keeps the fruit fresh and forward ... A steal in Ontario at $15.95.
Marcus (winemaker) describes 2019 as a "challenging, but good. Vintage" overall. The wine has a drop (.5%) of Cabernet Franc and the blend spends 15 months in oak, 42%, new French and 6% new American, all the rest is in older French. The fruit is pure and robust: plum, black cherry, blackberry with notes of chocolate, white smoke and silky tannins. Through the evening, the wine opened and became even more silky and ultimately gorgeous for both sipping and sniffing – the grilled beef fillet was not let down by the wine, nor vice versa. Purity of fruit and complexity makes this wine and the cellaring potential sits at about 15 plus years.

This is Duckhorn Vineyards’ second wine, and it’s a real treat. Powerful fruit offering red plum and plush chocolate along with hints of spice and smoke. It’s dangerously drinkable, on its own or with … whatever you want. (****+)
I would not call 2019 a blockbuster vintage in Ontario,
and yet what Vincenzo De Simone has pulled off with this Cab is nothing short of amazing

2019 was some kind of vintage in Ontario, nothing to write home about, but those who managed their vineyard properly got out with they put in. Here De Simone must have been painstakingly careful, because they have crafted a beautiful Cabernet Sauvignon that should not be possible. Picked on November 19th, aged in 50 / 50 American / French oak of which the French was new and the American 3 years old. The wine is a triumph, especially when considering the vintage. A sweet mid palate with complexity to spare: black cherry, cassis, mocha, white pepper and a lovely acidity that helps carry the weight of the wine. I'd say amazing for the vintage, but it's just an all-around great wine. Only 112 cases made. (**** ½)

Single Vineyard - No. 18 Suelo de Piedras
WRITTEN REVIEW
Super cherry-mocha and spiced-red plum start, and it just keeps getting better from there as it opens up in steps: subtle oak, cinnamon, more spiced plum, this time it's of the darker variety and some strawberry – cherry finishes it all off and lingers a long time. This fine bottle of Chilean Cab hits all the right notes, all that's missing is the mint, maybe it just needs time. (****+)

Carpineto 2016 Farnito Cabernet Sauvignon

This beauty in the Farnito-line is from the "perfect" 2016 vintage. It's pure elegance in the glass, with notes of leather, chocolate, cherry, blackberry and even a hint of strawberry. The combination proves magical in the mouth. (**** ½)

A real beauty with its mint and smoke on the nose; on the palate there’s a real depth with lots of lush dark fruit, this one hits all the right notes: black cherry, blackberry, vanilla and smoke - I reiterate, it’s a beauty. (****+)
To many Rothschild is synonymous with France, but should we also be equating it to Chile

Escudo Rojo 2018 Cabernet Sauvignon Origine (The Written Review)
This is a special cuvee of 100% Cabernet Sauvignon from the most storied part of the vineyard. It spends 12 months in barrel (25% new) with additional resting in bottle for another year. Lovely expression of Chilean Cabernet with plenty of minty notes on the nose along with black cherry - the palate is delicate with that mint, but loads up on blackberry and black cherry along with a lovely note of chocolate on the finish. Fresh, long and elegant. (****+)
Sweet red fruit with a good acidity... Typically big alcohol for California (14.5%) but with a juicy dark fruit, and chocolate and subtle spice ... Sure it has that California fruit, it's a seductive wine with all that sweet fruit, but there's also a milk chocolate note that really sways your taste buds and the core is all dark fruit. (****+)
